Quiche with Smoked Ham and Mushrooms



Quantity Ingredient
125 g (1 cup) Piller's Black Forest Ham, diced
10 ml (2 tsp.) vegetable oil
5 ml (1 tsp.) garlic, minced
375 ml (1½ cup) onion, chopped
625 ml (2½ cup) mushrooms, chopped
155 ml (⅝ cup) frozen chopped spinach, defrosted and squeezed dry
250 ml (1 cup) old cheddar cheese, grated
45 ml (3 Tbs.) Parmesan cheese, grated
3 eggs
2 egg whites
30 ml (2 Tbs.) rice or potato flour
45 ml (3 Tbs.) fresh dill, chopped, or 5 ml (1 tsp.) dried
Pinch salt and pepper



Preheat oven to 350°F. Lightly coat a square or round baking dish with vegetable oil spray. Heat the oil in a large, non-stick skillet over medium heat. Add garlic and onions and sauté for 3 minutes. Add diced ham and sauté for 5 minutes. Add mushrooms and cook until softened, 5 minutes. Add spinach and cook for 2 minutes.

Remove from the heat and add cheddar and Parmesan cheeses, eggs, egg whites, flour, dill, salt and pepper. Mix well and pour into the prepared pan. Bake in the center of the oven for 35 - 40 minutes, or until a knife inserted in the center comes out clean. Serve warm.
