In a blender combine eggs, spring onions, leeks, and roasted garlic. Purée for 30 - 45 seconds until mixture is smooth. Add 1 cup diced ham and blend on low for 10 seconds more. Place muffin cups in a muffin tin; place one mini pita in the bottom each muffin cup. Pour egg and ham mixture over pitas, filling each cup about three quarters full.
