Grilled Kolbassa Flatbread

1 Piller's Kolbassa Sausage
4 naan flatbreads (or pita)
1 medium zucchini, sliced
2 tbsp olive oil
100g goat's cheese, crumbled
1 cup fresh arugula
2-3 tbsp balsamic glaze
salt & pepper, to taste

Directives

  1. Preheat BBQ to medium heat (about 400°F) and lightly oil the grill grates.
  2. Place zucchini and kolbassa on the grill. Grill for 8–10 minutes, turning occasionally, until kolbassa is heated through with light char and zucchini is tender. Remove and slice kolbassa.
  3. Grill naan for 1–2 minutes per side until warm and lightly toasted.
  4. Assemble flatbreads: drizzle lightly with olive oil, then top with sliced kolbassa, grilled zucchini, and goat’s cheese.
  5. Return to grill for 3–5 minutes until heated through and cheese is slightly softened.
  6. Remove from grill and top with fresh arugula and a drizzle of balsamic glaze.
  7. Season with salt and pepper, slice, and serve immediately.
