Chorizo Rice Bowl



Quantity Ingredient
1 cup Brown rice
1 Sliced avocado
1/2 cup Diced chorizo toppings
1/2 can Black beans
Cut up Pineapple
1/2 cup Arugula
1/3 cup Cherry tomatoes cut in half
Sliced up Onion
Sliced up Radishes
1/4 cup Jalapenos (optional)
2 tbsp. Feta Cheese


In a medium saucepan, combine the rice with 1 3/4 cup water and ½ teaspoon salt. Bring to a boil. Cover and reduce heat to medium-low. Simmer until the rice is tender and water is absorbed, about 15 minutes.

In a separate pan, cook chorizo until desired (optional, chorizo is ready to eat and can be used as is)

While rice is cooking, prepare avocado, tomatoes, beans, radishes, pineapple, jalapeno and cheese on a cutting board.

Once rice completes cooking, combine all ingredients into a bowl and top with your choice of dressing.
