Quesadillas with Smoked Breakfast Ham and Pesto

Serves 6


4 slices Piller’s Smoked Breakfast Ham, chopped
10 ml (2 tsp.) vegetable oil
250 ml (1 cup) onion, chopped
10 ml (2 tsp.) garlic, crushed
60 ml (¼ cup) pesto
125 ml (½ cup) part-skim mozzarella cheese, grated
30 ml (2 Tbs.) Parmesan cheese, grated
4 large whole wheat flour tortillas

Spray a large non-stick skillet or grill pan with cooking oil and place over medium-high heat. Add the chopped smoked breakfast ham and sauté for 2 minutes until lightly browned; set aside. Heat the oil in the same skillet over medium-high heat. Sauté onion and garlic for 5 minutes or until the onions are tender and browned. Stir in pesto, cheeses and ham. Divide the mixture among the tortillas, placing on half of each tortilla. Fold the other half over top. Heat on a grill pan or in a large skillet for 2 minutes on each side. Cut each tortilla into 3 wedges, making 12 wedges in total.
