|125 ml (½ cup)||Gorgonzola cheese, cut into cubes|
|125 g pkg.||Piller's Charcuterie Speck Prosciutto (8 slices)|
|30 ml (2 Tbs.)||extra virgin olive oil|
|Sea salt, freshly ground black pepper|
Preheat grill to medium-high heat. On each fig half, place a cube of Gorgonzola cheese. Wrap the prosciutto around each fig half, covering the cheese. The ends of the prosciutto should overlap. Grill each piece until the ham begins to color and crisp, about 2 minutes on each side. The cheese should be just melted and the inner part of the fig still cool in temperature. Remove from grill, lightly drizzle with extra virgin olive oil, and season with sea salt and pepper. Serve warm.
