Loaded Baked Potatoes

10 mini potatoes, cooked and halved
10 ml (2 tsp.) butter
Salt and pepper, to taste
140 g pkg. Piller’s Pepperoni cut in half, halved lengthwise
60 ml (⅓ cup) grated cheddar cheese
2 strips crispy bacon, finely chopped
75 ml (⅓ cup) sour cream
30 ml (2 Tbs.) finely chopped chives

Preheat oven to 375°F. Using a small spoon, remove half of the potato flesh from each potato and place in small bowl; stir in butter and season with salt and pepper. Pile back into potato halves. Top each half with 2 pepperoni slices, sprinkle with cheese and bacon; heat in oven for 10 minutes or until warmed through. Remove from oven and top with sour cream and chives.
