Sausage Sliders


500 g pkg. Piller’s Simply Free Bratwurst, cut diagonally in 1 cm (½”) slices
1 baguette, cut diagonally in 1 cm (½”) slices
Grainy Dijon mustard
Zucchini Relish:
5 ml (1 tsp.) olive oil
1 zucchini, finely diced
½ red pepper, finely diced
¼ red onion, finely diced
45 ml (3 Tbs.) red wine vinegar
30 ml (2 Tbs.) chopped fresh herbs (parsley, thyme, basil)
Watercress for garnish (optional)

Grill sliced sausage and set aside. Toast baguette slices on grill until golden; remove to a serving platter. For zucchini relish, heat a frying pan over medium heat. Add oil, zucchini, red pepper and onion; fry until soft, about 5 minutes. Stir in red wine vinegar; remove from heat and stir in fresh herbs. Top each baguette slice with some grainy mustard and a grilled sausage slice; top with zucchini relish and garnish with watercress, if desired.
