How are Black Kassel meats which are Free of Allergens* manufactured?

We completely clean and sanitize all production lines prior to running our Free of Allergens* deli meats. We schedule our Free of Allergens productions for the first run of the day, immediately after the equipment has been sanitized. We micro-swab our food contact surfaces on a weekly basis and also break down our food contact equipment daily to ensure proper cleaning and sanitizing of all food contact surfaces. Our cleaning program is validated after every cleaning cycle to ensure all traces of allergens are removed.

*Free of all major food allergens (milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat and soybeans)

How long will Black Kassel deli meats stay fresh after opening?

Black Kassel deli meats will stay fresh for 4 to 5 days after opening if kept refrigerated and well wrapped.

What are the spices and spice extracts listed in the ingredients?

Spices and spice extracts are proprietary to our recipes and so are not listed on packaging or the website. If you have a sensitivity to a spice or herb that is not a major allergen, please contact customer service at 1-800-265-2627 for further information.


Huber Brothers - Edward, Wilhelm and Heinrich

A Proud Heritage

In 1957, Wilhelm Huber opened a small butcher shop in Waterloo, Ontario using family recipes and traditional European meat processing methods to provide his customers with authentic, great-tasting European deli meats. Two years later, his brothers Edward and Heinrich joined the company which became Piller’s Sausages and Delicatessens Limited.

From those humble beginnings, Piller’s has become one of North America’s largest producers of European sausages and deli meats, famous for award-winning products such as Black Forest ham and air-dried salamis. To this day, after five generations of sausage makers, Piller’s still uses the same natural aging, curing, and smoking process that had customers lining up outside Wilhelm Huber’s butcher shop over 60 years ago.

In 2011, the company was acquired by Premium Brands Holdings Corporation and is now known as Piller’s Fine Foods.

The Legend of Black Kassel

The founders of Piller’s Black Kassel have been making dry-aged meat products in North America for over 60 years. The last five generations of this family have been master butchers, but their story begins long before that - some say a thousand years - for the art of crafting the world’s finest salamis and meats can be traced back through history even earlier than medieval times. The Black Kassel recipes and traditions were passed down from father to son over many generations in Europe, and in this century, crossed the Atlantic allowing North Americans to enjoy these legendary delicacies too.

In earlier times, the family’s ancestors lived in the regions dotted by imposing castle fortresses, majestic mountains, and rolling hills that descended into fertile river valleys, the beauty of which have inspired legends. One tale is about a certain old castle nestled on the winding back of a river, up and down which travelled ships headed for trade in the far corners of Europe and beyond, while caravans travelled over crisscrossing roads to bring luxury goods and exotic spices from faraway lands. The lord and his family entertained at their castle on a lavish scale, but what guests remembered most was the grand and unique charcuterie, salamis, sausages and hams. The salamis came in shapes they had never seen before: hearts, diamonds and flowers - symbols inspired by the motifs decorating the castle’s shields and magnificent tapestries. The meats were carefully blended with aromatic spices, then gently smoked over hardwood fires in the kitchens outside the Great Hall. Over time, as news of these delicious meats spread, demand for them grew, and the continuous slow-smoking hardwood fires gracefully turned the bright stone walls of the castle to a unique dark hue. The fortress became known as “The Black Castle”.

Today, the legendary, distinctive taste of Black Kassel meats celebrates a centuries old desire to craft quality meats that are the center of any table. Black Kassel meats uphold these traditions, with their distinctive shapes and authentic European recipes that have stood the test of time by being handed down through generations. With carefully blended spices, natural hardwood smoke, and a patient dry aging process, a great taste experience awaits time and time again.

Our Technology

In each of our three production facilities in Ontario, we utilize state-of-the-art meat processing equipment, the most up-to-date smokehouses, and the highest quality slicing and packaging production machinery.

All of our facilities are fully networked with the most advanced high-tech computer systems. As a result, we have the capability to manufacture all our products at any one of our facilities, so we can meet the demands of any customer, any request, any time of the year.

At our warehouse, order picking uses bar code scanning technology in the racking system to find customer orders and send them to the conveyors for delivery to our shipping area for the most efficient delivery system in the industry.
