To this day, after five generations of master butchers, Piller’s still uses the same natural aging, curing, and hardwood smoking process that had customers lining up outside the butcher shop over sixty years ago. Naturally Wood SmokedWe are dedicated to artisanal craftsmanship and still smoke our meat over natural hardwood fires. Wood smoking is a time-honoured process that, when used in conjunction with curing, preserves and adds a smoky flavour to our meat, for an impeccable taste. Dry CuredThe art of dry curing is a tradition that produces salami with a famously rich aroma, tender slices and a flavour that is savoured and remembered. In keeping with our authentic European tradition, we hang our meat as long as necessary, allowing airflow and changes in humidity to dry it to its most flavourful point.Award Winning ProductsIn Canada, Piller’s won the BrandSpark Best New Product Award for Ready to Eat Packaged Meat in 2014 and 2015, as voted on by 20,000 consumers.
