Grillwurst and Summer Vegetable Foil Packets

Ingredients
375 g pkg. Grillwurst, cut in 2.5 cm (1”) pieces
2 Ears of sweet corn, cut in 2.5 cm (1”) pieces
1 bunch Asparagus spears, halved
1 Zucchini, sliced into rounds
1 Red bell pepper, sliced
1 Red onion, thinly sliced
250 ml (1 cup) Grape tomatoes
30 ml (2 Tbsp.) Parsley, finely chopped
5 ml (1 tsp.) Garlic powder
60 ml (1/4 cup) Olive oil
Salt and pepper
4 sheets Heavy-duty tin foil, 12-inches long
Method

Preheat grill to medium heat. In a large bowl, mix olive oil, parsley, garlic powder, salt and pepper. Stir well. Add sausage and veggies and toss until evenly coated. Cut four sheets of heavy-duty tin foil, about 12-inches long. Divide mixture equally across all four sheets, fold up all sides of foil and firmly wrap to seal packets. Grill over medium heat for 15-20 minutes, rearranging packets frequently, until vegetables are tender. Remove from heat and carefully open packets allowing steam to escape, and then serve.
