Grilled Kolbassa Power Salad

Ingredients
375 g pkg. Piller's Kolbassa, cut into 16 thin, round slices
500 ml (2 cups) fresh kale, chopped
500 ml (2 cups) mixed greens
250 ml (1 cup) Brussels sprouts, thinly sliced
60 ml (¼ cup) fresh basil, finely chopped
125 ml (½ cup) dried cranberries
Dressing:
5 ml (1 tsp.) roasted garlic
60 ml (¼ cup) fresh lemon juice
15 ml (1 Tbs.) honey
175 ml (¾ cup) grape seed oil
5 ml (1 tsp.) yellow mustard
Salt and pepper, to taste
Method

Preheat grill to medium/high. Grill Kolbassa slices to brown slightly on each side. Cut each slice in half and set aside to cool. For dressing, combine ingredients in small food processor and mix for 30 seconds. To assemble salad, divide greens onto 4 plates and place grilled Kolbassa on top of greens. Garnish with fresh basil and cranberries; drizzle 60 ml (2 tablespoons) dressing over each salad. Alternately, toss all ingredients together and serve.
