Breakfast Ham Wrap

Ingredients
4 slices Piller’s Simply Free Smoked Breakfast Ham, sliced into strips
1 15 cm (6”) flour tortilla wrap
2 eggs, scrambled
8 spinach leaves
125 ml (½ cup) cheddar cheese, shredded
30 ml (2 Tbs.) Roasted Red Pepper Aioli (recipe follows)
Roasted Red Pepper Aioli:
250 ml (1 cup) roasted red peppers
60 ml (¼ cup) fresh basil, chopped
125 ml (½ cup) low fat sour cream
Salt and pepper, to taste
Juice of one lemon
Method

In a food processor, combine ingredients for Roasted Red Pepper Aioli and purée until smooth, about 1 - 2 minutes. Spread one tablespoon of the aioli over each wrap; top with breakfast ham, scrambled eggs, spinach and cheese. Wrap sandwiches tightly and serve.
