Protein Breakfast Scramble

Ingredients
30 ml (2 Tbs.) Piller's Chorizo Sausage, diced
5 ml (1 tsp.) canola oil
15 ml (1 Tbs.) onions, finely diced
15 ml (1 Tbs.) red or green bell peppers, diced
1 ml (¼ tsp.) garlic, minced
1 ml (¼ tsp.) chili powder
3 eggs
30 ml (2 Tbs.) salsa
15 ml (1 Tbs.) aged cheddar cheese, shredded
Method

For each serving, in a small, non-stick fry pan over medium/high heat, add oil, chorizo, peppers, onions, minced garlic, and chili powder. Sauté for 2 - 3 minutes. Whisk eggs and add to mixture, scrambling for 2 minutes or until eggs are softly set. To serve, place egg mixture in a bowl and top with salsa and shredded cheese.
