Minestrone Soup

Ingredients
500 ml (2 cups) Piller's Knackwurst Sausage, cut in 1 cm (½”) cubes
2 L (8 cups) chicken stock
160 ml can tomato paste
250 ml (1 cup) carrots, cut into 1 cm (½”) cubes
250 ml (1 cup) celery, cut into 1 cm (½”) cubes
1 medium onion, chopped
540 ml can white kidney beans, drained and rinsed
3 garlic cloves, minced
750 ml (3 cups) baby spinach leaves, washed and dried
250 ml (1 cup) uncooked mini pasta shells
15 ml (1 Tbs.) dried oregano
30 ml (2 Tbs.) olive oil
Grated Parmesan cheese
Method

Heat oil in a large pot over medium heat. Add carrots, onions, celery and garlic. Cover and cook for five minutes or until carrots and tender, stirring occasionally. Add sausage and continue to cook another 2-3 minutes. Add tomato paste, kidney beans, oregano and chicken stock. Bring to a boil, then reduce heat and simmer for 30 minutes. Add pasta shells and cook until tender, about 9 minutes. Add spinach. Simmer for 2 minutes and top with grated Parmesan cheese.
