Ham Skewers with Orange Ginger Glaze

Ingredients
800 g Piller's Black Forest Ham, 3 cm (1”) cubes
1 red bell pepper, 3 cm (1”) cubes
1 green bell pepper, 3 cm (1”) cubes
1 red onion, 3 cm (1”) cubes
250 ml (1 cup) fresh pineapple, cubed
1 limes, cut into 6 wedges
Olive oil
Balsamic vinegar
Salt and pepper
6 wooden skewers, 15 cm (6”)
Orange Ginger Glaze:
125 ml (½ cup) orange marmalade
30 ml (2 Tbs.) lime juice (1 lime)
5 ml (1 tsp.) fresh ginger, chopped
1 clove garlic, minced
250 ml (1 cup) water
Method

Soak wooden skewers in water for 20 minutes. On each skewer, assemble ham, peppers, onions and pineapple, alternating ingredients and finishing with a lime wedge on the end. Drizzle with some olive oil and balsamic vinegar; season with salt and pepper. Marinate for 30 minutes. Place on preheated grill on medium high heat; grill for 5 - 10 minutes, turning occasionally, until vegetables become tender. Brush with glaze and grill for 1 - 2 more minutes. Serve immediately. Glaze: In a small pot combine all ingredients. Bring to a boil on stovetop and cook at high heat for about 5 minutes until mixture reduces to a thick glaze.
