Green Eggs and Piller’s Ham

Ingredients
8 eggs
250 ml (1 cup) spring onions, chopped
250 ml (1 cup) leeks (green part only), chopped
2 roasted garlic cloves
375 ml (1 ½ cup) Piller’s Smoked Breakfast Ham, finely chopped
250 ml (1 cup) aged cheddar cheese, shredded
12 mini pitas
12 parchment muffin cups (the ones with the high walls)
Method

Preheat oven to 350°F. In a blender combine eggs, spring onions, leeks, and roasted garlic. Purée for 30 - 45 seconds until mixture is smooth. Add 1 cup diced ham and blend for 10 seconds more. Place muffin cups in a muffin tin; place one mini pita in the bottom each muffin cup. Pour egg and ham mixture over pitas, filling each cup about three quarters full. Sprinkle with cheese and remaining ½ cup of diced ham; bake for 12 -15 minutes. Serve warm.
