Ingredients

Piller’s Simply Free™ Maple Sugar Smoked Ham 700 g

Glaze

6 tbsp apricot jam 90ml
2 tbsp maple syrup 30ml
½ tsp Dijon mustard 3ml
4 tsp apple cider vinegar 20ml
3 tbsp chopped cilantro or parsley 45ml
1 tsp toasted sesame seeds 5ml

Edamame beans

1 lb frozen shelled edamame beans 450g
1½ tsp sesame oil 8ml
1 tsp finely grated ginger and garlic 5ml
4 tsp gluten-free soy sauce 20ml
½ tsp hot chili sauce 3ml

Garnish

3 tbsp chopped cilantro or parsley 45ml
2 cups diced pineapple 300g

Method

Preheat oven to 325°F. Line a baking sheet with parchment paper.

Preheat oven to 325°F. Line a baking sheet with parchment paper. Combine the jam, syrup, mustard, soy and vinegar in a small saucepan over medium-low heat. Simmer until slightly thickened. Remove 2 tbsp and brush over ham. Reserve remaining glaze. Bake approximately 1 hour or until internal temperature reaches 140° F. Sprinkle with sesame seeds. Let rest 10 minutes while preparing edamame.
Place edamame into boiling water and boil for 1 minute. Drain and add remaining ingredients.
Cut ham into thin slices and serve with remainder of glaze, cilantro and pineapple. Serve edamame beans alongside.
