Maple Syrup and Apricot Glaze Ham Steaks

Piller’s Simply Free™ Maple Sugar Smoked Ham 700 g
Glaze
| 6 tbsp | apricot jam | 90ml |
| 2 tbsp | maple syrup | 30ml |
| ½ tsp | Dijon mustard | 3ml |
| 4 tsp | apple cider vinegar | 20ml |
| 3 tbsp | chopped cilantro or parsley | 45ml |
| 1 tsp | toasted sesame seeds | 5ml |
Edamame beans
| 1 lb | frozen shelled edamame beans | 450g |
| 1½ tsp | sesame oil | 8ml |
| 1 tsp | finely grated ginger and garlic | 5ml |
| 4 tsp | gluten-free soy sauce | 20ml |
| ½ tsp | hot chili sauce | 3ml |
Garnish
| 3 tbsp | chopped cilantro or parsley | 45ml |
| 2 cups | diced pineapple | 300g |
Method
Preheat oven to 325°F. Line a baking sheet with parchment paper.
Preheat oven to 325°F. Line a baking sheet with parchment paper. Combine the jam, syrup, mustard, soy and vinegar in a small saucepan over medium-low heat. Simmer until slightly thickened. Remove 2 tbsp and brush over ham. Reserve remaining glaze. Bake approximately 1 hour or until internal temperature reaches 140° F. Sprinkle with sesame seeds. Let rest 10 minutes while preparing edamame.
Place edamame into boiling water and boil for 1 minute. Drain and add remaining ingredients.
Cut ham into thin slices and serve with remainder of glaze, cilantro and pineapple. Serve edamame beans alongside.
