Turkey Bite® Corndogs
INGREDIENTS
| 16 | Pillers Turkey Bites® (cut in half) | 16 |
| ¼ cup | Cornmeal | 60ml |
| 1¼ cup | Flour | 310ml |
| 1 tsp. | Salt | 5 ml |
| ¼ tsp. | Paprika | 2ml |
| pinch | Nutmeg | pinch |
| ¾ cup | Milk Or subsiitute 35% cream ¼ cup or 60ml |

| 1¼ cup | Chicken stock | 310 ml |
| 1 | Egg(separated | 1 |
| Oil for frying | ||
| 32 | Skewers (6 inch) | 32 |
| ½ cup | Honey Mustard for dipping | 125 ml |
METHOD
- In a bowl stir together the cornmeal, flour, salt, paprika and nutmeg.
- Whisk in the milk, chicken stock and egg yolk.
- In a separate bowl, whisk the egg white to a soft peak then fold it into the mixture.
- Insert a skewer into end of each half Turkey Bite®.
- Roll each corndog into the mix until well coated.
- Fry in pre-heated oil using a candy thermometer @375F until golden, approximately 2 minutes.
- Arrange on platter and serve with side dish of honey mustard for dipping.
