Potato Salad
INGREDIENTS
| 2lbs (approx. 32) | small new potatoes | 900g |
| 2oz. | sherry vinegar | 60ml |
| 14oz. | Piller's polish sausage | 375g pkg. |
| 2 TBSP. | cured black olives (about 12) pitted and chopped | 30ml |
| 2 TBSP | sundried tomatoes (chopped) | 30ml |
| 1 TBSP | capers (chopped) | 15ml |
| 1 cup | mayonnaise | 250ml |
| 1 TBSP | chopped chives | 15ml |
METHOD
Cook potatoes whole in salted water until tender. Drain, cut into halves and sprinkle with sherry vinegar. Allow to cool then add olives, sundried tomatoes and capers. Add mayonnaise and combine together. Slice the sausage into 1/4 inch rounds and then each round into 4 and add to salad. Check seasoning for salt and pepper. Top with chopped chivesMakes 6 to 8 servings
