Minestrone Soup
INGREDIENTS
| 8 cups | chicken stock | 2 litres |
| 1 X 51/2 | can tomato paste | 156ml |
| 1 cup | carrots (cut into 1/2 inch cubes) | 250ml |
| 1 cup | celery (cut into 1/2 inch cubes) | 250ml |
| 1 | medium chooped onion | |
| 1 can (190 oz) |
white kidney beans (drained and rinsed) |

| 3 | cloves carlic (minced) | |
| 2 cups | Piller's all beef sausage (cut into 1/2 inch cubes) |

| 3 cups | baby spinach leaves (washed and spun) |
750ml |
| 1 cup | mini pasta shells | 250ml |
| 1 TBSP. | dried oregano | 15ml |
| 1oz. | oil | 28ml |
METHOD
Heat oil in a large pot over medium heat. Add carrots, onions, celery and garlic. Stir, cover and cook for five minutes stirring occasionally or until carrots are tender. Add beef sausage. Stir and contunue to cook another 2 to 3 minutes. Add tomato paste, kidney beans, oregano and chicken stock. Bring to a boil then reduce qand simmer for 30 minutes. In a seperate pot cook pasta shells according to package directions. Drain and add to soup. Add spinach, simmer 2 minutes and serve.
Yields 12 cups or 3 litres or 6 8oz.(225g) servings.
