Maple Blueberry Cheesecake Crépes

INGREDIENTS

1 (8 oz) pkg

cream cheese, softened 1 (225g) pkg
1/3 cup icing sugar 75 mL
1 tsp vanilla 5 mL
1/2 cup whipping cream 125 mL
2 cups fresh blueberries 500 mL
1 pkg Piller's Chef's Hearth
Vanilla Crêpes
1 pkg
optional Maple Syrup

Set crêpes aside so they are at room temperature
prior to filling. In a small bowl, beat cream cheese,
icing sugar and vanilla until smooth. Beat cream until stiff peaks form. Fold into cheese mixture. Chill if necessary until ready to use. Spoon about 1/4 cup (50 mL) cheese filling into centre of smooth side of each crêpe. Fold two opposite sides of crêpe to overlap filling. Fold remaining sides forming a square packet. Serve crêpes topped with fresh blueberries and maple syrup.
