Maple Blueberry Cheesecake Crêpes

| 1/3 cup | icing sugar | 75 mL |
| 1 tsp | vanilla | 5 mL |
| 1/2 cup | whipping cream | 125 mL |
| 2 cups | fresh blueberries | 500 mL |

Set crêpes aside so they are at room temperature
prior to filling. In a small bowl, beat cream cheese,
icing sugar and vanilla until smooth. Beat cream to
stiff peaks. Fold into cheese mixture. Chill if
necessary until ready to use. Spoon about 1/4 cup (50 mL) cheese filling into centre of smooth side of each crêpe. Fold two opposite sides of crêpe to overlap filling. Fold remaining sides forming a square packet. Serve crêpes topped with fresh blueberries and maple syrup.
