Ham Skewers with Kumquat Glaze
INGREDIENTS
| Piller's Black Forest Ham (1 inch cubed) |
| red and green peppers |
| red onion |
| 1 cup cubed fresh pineapple |
| 3 key limes |
| Oil |
| Balsamic vinegar |
| Salt and pepper |
Cut all ingredients into 1 inch squares and assemble onto wooden skewers, alternating ingredients, red pepper, ham, green pepper, ham, red onion, pineapple, ham and repeat, finishing with half a key lime on the end (or wedge of regular lime). Drizzle with some oil and balsamic vinegar and season with salt and pepper. Let marinate for 30 minutes then place on preheated grill on medium high heat and grill for 5 to 10 minutes turning occasionally or until vegetables become tender. Brush with kumquat glaze and grill for 1 to 2 more minutes. Serve immediately.
For the Kumquat Glaze
INGREDIENTS

| 1oz. | lime juice (1 lime) | 30ml |
| 1 tsp. | chopped fresh ginger | 5ml |
| 1 | clove garlic (minced) | 1 |
| 1/2 tsp. | curry powder | 3ml |
| 1/2 cup | sugar | 125ml |
| 1 cup | water | 250ml |
| 1 TBSP. | dark rum | 15ml |
METHOD
Wash kumquats and remove any stems. Slice in quarters lengthwise and remove any seeds.Place in food processor and process until finely chopped.
Scrape kumquats into a small pot and add remaining ingredients except rum. Bring to a boil on stovetop and cook at high heat for approximately 10 minutes until mixture reduces to a thick glaze. Stir in rum.
Makes enough glaze for 6 skewers
