Corn Biscuits with Black Forest Ham

INGREDIENTS

1/2 cup Butter 125ml
2/3 cup Brown Sugar 160ml
1/4 cup Maple Syrup 60ml
2 Eggs 2
1/2 tsp. Salt 3ml
1 1/2 cups All purpose flour 375ml
3/4 cup Yellow cornmeal 180ml
1/2 tsp. Baking powder 3ml
1/2 cup Milk 125ml
3/4 cup Frozen corn 180ml
2 cups Diced Piller's Black Forest Ham 500ml
1/4 cup Chopped Jalapenos 60ml

METHOD

  1. Cream together butter, brown sugar, maple syrup eggs and salt.
  2. Add flour, cornmeal and baking powder and blend thoroughly.
  3. Add milk while mixing.
  4. Stir in corn, ham and jalapenos by hand until worked in.
  5. Spoon into a greased and floured 9X9 pan and bake in a pre-heated 375ºF oven
  6. for 20 to 25 minutes or until golden brown and an inserted toothpick comes out clean.

THESE BISCUITS GO GREAT WITH SCRAMBLED EGGS FOR BREAKFAST
