Boston and Smoked Chicken Salad
INGREDIENTS
| 1 | hydroponic Boston lettuce | 1 |
| 1 can | whole mandarin segments | 284ml |
| 1/2 oz. | (weight) dried cranberries | 14g |
| 16 | pecan halves toasted | 60ml |
| 10oz | cubed Piller’s smoked chicken | 285g |
| 1 TBSP. | sunflower seeds | 15ml |
Raspberry Vinaigrette
INGREDIENTS
| 6oz. | fresh raspberries | 170g |
| 1 TBSP. | red wine vinegar | 15ml |
| 1 tsp. | dijon mustard | 5ml |
| 1 TBSP | sherry vinegar | 15ml |
| 1 tsp | sugar | 5ml |
| 1 TBSP. | pomegranite molasses (available at eastern or asian food stores) |

Put all ingredients together in a blender and process until smooth. You can substitute 1 more TBSP. of sugar in lieu of the pomegranite molasses.
METHOD
Arrange lettuce on 2 plates. Sprinkle with remaining ingredients, ( half on each salad) and drizzle with vinaigrette.NOTE
Vinaigrette recipe makes enough for 4 to 6 salads. Keep refrigerated.
